Every few weeks on Friday, I find myself wondering into this neighborhood pastry shop called Copenhagen Pastry. It’s a small, yet modern looking store on a busy street. My favorite is this Kringle cake, it has the most fluffy and buttery texture ever, and is never overly sugared like a lot of American desserts are. The owner Karen is a super sweet Danish woman who always greets me with a big smile and offers me samples.
Sometimes I pick up a whole Kringle cake to share with my coworkers – you are guaranteed to have a great day if it starts with a fluffy and crunchy slice of Kringle. 🙂
